I'm looking to get the total number of times a specific snippet / response was used over the last week but I'm not seeing that option anywhere. Is there a way for me to check the usage across a single item instead of just the high level organization usage?

You can see usage for the most popular snippets in the organization, but not all snippets.
For less frequently used snippets, orgs on our Enterprise plan can also download an Action Audit Log of insertion events which can be analyzed finer grained statistics like this.
